About coffee
Remolinos coffee comes from farms situated in the municipalities of Pitalito and San Agustin Palestina in southern Huila. Huila is part of the Colombia Massif, a UNESCO Biosphere reserve covering 4 departments of Southwest Colombia where the Andes separate into two mountain ranges (central and eastern) and where 5 of Colombia’s main rivers are born. This reserve is a strategic area for Colombia, holding more than 70% of the country’s freshwater and an impressive source of biodiversity. Soils in the Massif are extremely rich and fertile for agriculture.
What this location means for coffee is that the ecosystem in which coffee grows between 1200 and 2000 masl is conducive to the development of complexity in the fruit. As described in the Appellation of Origin “Cafe de Huila”: the limited sunlight in the region, averaging 1,260 hours per year – about 3.5 hours per day – creates a natural shade that encourages the accumulation of chemical precursors (lipid content and chlorogenic acids) which positively contribute to the coffee’s flavor profile.
About variety
Since its appearance in 2014 in the village of San Adolfo, municipality of Acevedo Huila, this variety has managed to captivate a large number of producers in southern Huila due to its resistance to rust, high productivity and cup quality. Many producers in the municipalities of South Huila adopted this varietal as a substitute for the caturra that became too susceptible to rust, and as a better alternative to castillo or colombia in terms of flavour complexity. The large amount of pink bourbon that abounds in the area ensures a well-defined, structured and replicable profile in volume.
Another characteristic of pink bourbon is that the yield from parchment to exportable green is lower than most arabica varietals, because the parchment is heavier, and it tends to produce more peaberries whose size often fall out of the exportable screen size norms for specialty standards.
We wanted to make it as easy as possible for you to choose your coffee, so we worked with the guys from Steezy Graphic Studio to come up with a “grid” – a simple grid where you can easily find the characteristics of each coffee.
