About coffee
This lot comes to us from the Adnan Washing station in the Kebina village in Sidama. Approximately 700 small-holder farmers deliver cherry to this washing station. At the Adnan washing station, they process coffee in traditional Ethiopian fashion. Here they utilize shade nets to slow down drying time, at times taking up to 30 days which they believe allows them to have an extremely controlled and even drying, resulting in a very consistent and elevated cup profile.
With the special prep (what the producers generally call “Premium” in Ethiopia) the cherries are collected from a limited number of small-holder farmers. 90% of the cherries are perfectly picked, the right red color. 5% semi red and 5% overripe. All of it is processed and stored it separately from the other lots. They generally produce a very small number of bags in this way every year.
In most instances, cherries used to produce these lots are collected from a day lot (picked in one day). Natural coffees in Ethiopia are first sorted for ripeness and quality before being rinsed clean. Then they are spread on raised drying beds or tables, where they will be rotated constantly throughout the course of drying.
We wanted to make it as easy as possible for you to choose your coffee, so we worked with the guys from Steezy Graphic Studio to come up with a “grid” – a simple grid where you can easily find the characteristics of each coffee.
The red dot next to the description of each coffee is placed exactly there, so that you can easily imagine how the coffee will taste.
Citrus – chocolate
Here we’d like to give you an idea of how fruity the coffee will be. There’s a long way from citrus to chocolate, so imagine more in between:
citrus, berries, green apples, red apples, stone fruits, dried fruits, nuts, milk chocolate and dark chocolate 😉
Mild – wild
What is mild coffee? We’d say it’s unpretentious. A coffee that you can just have every morning and not have to think too much about it. It’s just good.
The higher the dot, the more excitement you can expect in the taste of coffee. The more surprising and fun it can be. These coffees are fruity, fun, interesting and make you think about what it is that you actually enjoy about them so much.
